First stop was at Coconuts Beach Club and Resort, Siumu for a dish of lobster.
The meal was served in the beautiful beachfront restaurant with views out over the ocean.
The lobster tail had been removed from the shell, cut into bite-sized pieces and flavoured with a coconut curry sauce. The dish was served with palusami, steamed pumpkin, taro, and small dishes of sliced New Zealand apple, raisins and chutney.
From there, the tasters headed down to Saletoga Sands.
This resort, which opened in 2014, is currently expanding to take over the neighbouring Samoa Hideway Resort.
The judges arrived in the middle of a fully booked lunch service, but were well taken care of by the friendly service staff.
After a starter of bread rolls, Chefs Kosa and Silivali had prepared a loin of lamb wrapped in bacon and served on a bed of palusami.
It was accompanied by a green bean and papaya salad and mint jelly. Completing the meal was a palate cleanser of sasalapa and mint sorbet.
