Samoa Culinary Association formed

GOALS: S.C.A aims to develop Samoa’s young people, work with various bodies and agencies to further develop the industry.Local Chef and owner of Scalinis Restaurant, Joe Lam, and Australian Chef, Michael Hardy, who has been executive Chef at Tanoa Tusitala since December 2014, have officially registered the Samoan Culinary Association (S.C.A).

S.C.A is a group of hospitality professionals from a range of different backgrounds and establishments including educational, restaurants, hotels and resorts.

As an association, S.C.A aims to develop Samoa’s young people, work with various bodies and agencies to further develop the industry.

The Samoan Culinary Association was formed to strengthen skills, knowledge and build solid industry relationships.

The first task of the association will be to organize a culinary competition for the public to see just what it is that chefs do. The second task will be to support the Hospitality Industry through training and development initiatives.

One of S.C.A first initiatives will be to provide 12 week unpaid traineeship in cookery for youth without jobs where they will work alongside some of the best chefs in Samoa and learn the essential skills and what it takes to be a chef.

Upon completion, the successful trainees will be provided with all the tools of the trade and uniforms to create a lasting career in the Hospitality Industry.

“This is a very special time in our Hospitality Industry here in Samoa – the forming of the Samoan Culinary Association is long overdue,” Mr. Lam said.

The purpose of the non-profit S.C.A is to encourage interest among local people in the culinary arts as a career, and to advance the skills and support for local chefs.

“Anything that we can do to promote the vibrant local food scene, local produce and encourage careers in the Hospitality Industry in Samoa,” said Mr. Hardy.

S.C.A is affiliated with the world chefs association and its associations in the region, including Australia, New Zealand, Fiji and Vanuatu. It has the backing of major overseas sponsors that have already funded a young local Chef and S.C.A member to participate in a New Zealand food competition and expo.

Membership is open to all food handlers, establishments, companies and individuals that have a passion to support the Hospitality Industry.
